- 1 pound asparagus, trimmed and halved
- 1 red onion, sliced
- 2 garlic cloves, minced
- 1 cup veggie stock
- 1 tablespoon lemon juice
- A pinch of salt and black pepper
- ¼ cup parsley, chopped
- In your slow cooker, mix the asparagus with the onion, garlic and the other ingredients, toss, put the lid on and cook on High for 2 hours.
- Divide between plates and serve as a side dish.
